HOME / Cuisine
Irori-grilled and kamado-cooked charyou cuisine. A bowl made by fire and hands — served in your room at your own pace.
DINING
Rikyuan's charyou cuisine begins at the irori hearth — vegetables and fish grilled over live charcoal, rice cooked in a traditional kamado. Everything made by hand.
All rooms dine in. The scent of charcoal arrives with the dishes.

SOURCING
Farms near Gora, fishermen from Sagami Bay, mountain greens foragers from Hakone. Choosing what belongs on the irori requires deep trust with producers.
Kamado rice, when cooked just right, develops a slightly caramelized bottom — okoge. That nutty scent is part of the pleasure.
