Tsukinoya's kaiseki follows the moon's calendar. Each course draws from Hakone's mountains and Sagami Bay — seasonal ingredients prepared simply and with care.
Breakfast is equally thoughtful: grilled fish, local pickles, and warm miso soup to ease you into a quiet morning.

SOURCING
Tsukinoya's cooking draws out the best of each ingredient rather than dressing it up. We work with local farmers and fishermen we've known for years, letting their produce guide the menu.
Mountain greens from Hakone, vegetables from Ashigara, fish from Sagami and Suruga Bays. As the moon changes, so does the table.
